Potatoes, Tomatoes, and Feta

Nice and easy; a soft 45 minutes.

We sautéd half a diced big onion, 3 sliced garlic cloves, and some dried oregano for about five minutes in olive oil.

That gave us enough time to wash and dice up about 1 kg of potatoes in bite size chunks and quarter 4 tomatoes. We added them, 1 tbls of tomatoe paste, and 3 bay leaves to the onion with plenty of salt and pepper.

Then we covered the mess with water and brought it to a boil. We let it simmer uncovered for about ten minutes.

Then we added 180g (a jar) of Kalamata olives and cooked it for another 10 minutes.

We served the yummyness with feta cheese and some olive oil and more dried oregano.
