Apple Fritters

Apple Fritters. Here we go:

In one bowl we mixed up 1 cup of flour, 1/4 teaspoon baking powder, a dash of cinnamon and nutmeg, as well as 2 tablespoons of sugar. In another 1 1/4 cups of almond milk and 1 egg.

Then we added the milk to the flour while whisking.

Next we cored and sliced up 4 apples.

Last we heated up coconut oil, slathered the apples in the batter and then fried them up till golden crispy.

We peeled and cut up a bunch of potatoes, cooked them in salted water and added a quite few pieces of butter, lots of cream, and grated nutmeg and salt to taste and mashed the whole thing up. We added enough cream for the perfect smoothness. These were better than the turkey. :)



Spinach Pasta

This has got to be the mother of all soul foods.  It took but 30 minutes to get ready and fed the girls some spinach. No tricks! The bowl was licked clean.


We started with cooking 1 and a half pounds of fettuccini. Then we sliced 2 cloves of garlic and warmed them up with some olive oil, a whack of butter and half a grated nutmeg

We washed and cut up 400g of spinach and tossed it in with the garlic. 

    
When it was all wilted down and tasting delicious we added some parmesan cheese, 150g of mascarpone, and a bit of cream. 


At last we added the pasta and a few ladles of cooking water. Salt and pepper. Yum!

Lena brought out napkins for this one. The sauce was dripping down our chins and nobody complained.
