Pea Soup

This one was  a simple, quick, 30 minute deal. We added some yummy bread and were ready to roll.

First we cut up 2 carrots and 2 sticks of celery and 1 big onion and 2 cloves of garlic.

Then we heated all that up in pot with some olive oil for 10 minutes while we heated another pot of 2 quarts of vegetable broth.

Then we tossed all that together with 3 small bags of frozen peas. Warmed it all up and cooked it for another 10 minutes, and whizzed it to a creamy soup with an immersion blender. A bit of salt and pepper. Voila!
